Grilled Chicken Burgers

ingredients:
1 pound ground chicken breast
1 granny smith apple, peeled, corded, grated, and squeezed dry with your hands
1/4 cup chopped green onion (2)
2 tablespoons snipped fresh mint leaves
2 teaspoons curry power
1/4 teaspoon salt (optional)
1/4 teaspoon cayenne pepper
nonstick cooking spray
1 cup lo-fat plain yogurt
2 tablespoons mango chutney
4 romaine lettuce leaves, torn
4 6-inch whole pitas cut crosswise in half

directions:
In medium bowl combine chicken, apple, green apple, mint, curry powder, salt (if desired), and pepper. shape into eight burgers.
Spray grill pan lightly with nonstick cooking spray. heat over medium heat. Cook burgers for 10 minutes or until no longer pink, turning only once.
Meanwhile, in bowl combine yogurt and mango chutney.
Divide lettuce among pitas, place 1 burger in each pita half; divide yogurt sauce among pitas and enjoy.

Hamburger Helper without the box!!!

1/2 cup of rotini
1/2 cup of elbow macaroni
1/2 pound of ground beef(or turkey)
1/2 cup of shredded cheese(cheddar)
1/2 cup of shredded Parmesan cheese
1 packet of McCormick brown gravy mix
1 teaspoon of garlic salt
1/4 cup of milk

Preparation: brown meat in skillet, boil pasta in 4qt pot until tender and drain. Add meat, cheeses, garlic salt, McCormick brown gravy mix and milk to pasta. Turn heat to low and stir until brown gravy mix is blended well, then serve. Season to taste and enjoy.

Homemade Peach Cobbler

1 Stick Butter(or Margarine)
1 Cup Flour
1 Cup Milk(whole or fat free)
1 Cup Sugar
1 Yellow Cake Mix
1 Can of Peaches(28 oz)

Preparation: Preheat oven to 350. Mix flour, sugar, milk and yellow cake mix into a mixing bowl. Melt butter and pour into a 13x9 inch pan. Pour mixture into pan. Pour peaches and juices on top, do not stir. Bake for 25 to 30 minutes or until golden brown.

Tasty Grilled Shrimp

Ingredients:
1 Bag frozen Shrimp(deveined and peeled)
2 tablespoons Butter/Margarine
1/2 teaspoon Extra virgin olive oil
1/4 teaspoon Garlic salt

Prepare: lay out shrimp on aluminum foil, add all above contents, close the foil, put grill or oven on about 350 and cook for about 25-30 mins. When shrimp is done it should be pink in color.

Pico de Gallo

Ingredients:
1 can of Rotel tomatoes
1/4 cup diced white onions
1 tablespoon diced peppers(your choice)
1 tablespoon minced garlic
2 limes squeezed
2 tablespoons chopped fresh cilantro
salt and pepper

Combine all ingredients in a bowl, salt and pepper to taste.
